Sky High Flaky Biscuits

It's been a while since I've been on here. We got another dog last week. She's 9 weeks old now and keeping us busy. Her name is Emma and we love her to pieces, even if she does poo more than any being should be able to and chews on everything. Our other two dogs have luckily started coming around to having her home. That are they have given up hope she will just disappear one night while they are asleep.

Look at her though, it's impossible not to fall head over heals for her.

Any who - onto the biscuits! I love these. They are super fast and easy to make.

Here's what you'll need:

2 cups flour

1 tablespoon sugar

1 tablespoon baking powder

2 teaspoons salt

1 stick of really cold butter

3/4 cup milk

1 tablespoon vinegar

 

As soon as you know you're going to make these biscuits, throw your stick of butter in the freezer. It doesn't matter if it's only 10 minutes notice, go ahead and pop it in there for 10 minutes.

Preheat your oven to 400 degrees F. Now that your butter is nice and cold you can just grate it with a cheese grater. Then, add it in a bowl with all of your dry ingredients, and cut it in.

To cut it in you can use a pastry blender, or two butter knives, as I've used here. After it's all combined add you're vinegar to your milk. Then, add your milk vinegar combo to the bowl and stir it around until it's all mixed together.

Now roll it out on a floured surface.

Fold it in half.

Fold it in half, again. Then gently roll it out to about 1/2 inch or so thickness. Folding it over like this is what makes it nice and flaky.

Now cut them out with a biscuit cutter, or if you're like me, just use a wine glass.

As you cut them out, place them on a parchment covered pan. You'll have to make it all back into a ball and re-roll and fold a few times to get the max amount of biscuits out of your dough. I normally get 6-7 biscuits out of it. Last, pop them in your 400 degree oven for 15-20 minutes.
